White Chili

This was originally an Ellie Krieger recipe. I've only changed a couple of things. I make this one a lot.

1 Tbsp. olive oil
1 onion, diced
2 stalks celery, diced
3 poblano or Anaheim peppers, seeded and diced
1 clove garlic, minced
1 tsp. ground cumin
1/2 tsp. ground coriander
1/4 tsp. ground cayenne pepper
1 pound ground turkey breast
2 (15 oz.) cans cannelini beans, rinsed and drained
4 c. low sodium chicken broth
3/4 tsp. dried oregano
1 (15 oz) can white corn, rinsed and drained
salt to taste
sour cream and chopped cilantro for garnish

Heat the oil in a Dutch oven over moderate heat. Add onion, celery and peppers, stirring occasionally, until the vegetables are soft, about 8 minutes. Add the garlic, cumin, coriander and cayenne and cook about 30 seconds.

Add the turkey and cook, breaking it up with a spoon, until no longer pink. Add the beans, broth and oregano. Cook, partially covered, for 25 minutes.

Add the corn and salt and continue cooking, partially covered, another 10 minutes. Serve with sour cream and cilantro.

But if you want to lose weight, I suggest using the BMR calculator always. It is important whether you want to add or lose weight.
